Ingredients
1 green pepper, diced
1 red pepper, diced
1 courgette, cut into quartered slices
½ red onion, diced
5 button mushrooms, cut into halves
1 small broccoli, cut into florets
3 handfuls of sweet corn, cut in half
Fresh basil or coriander, chopped
3 cloves garlic, minced
6 oz. firm tofu
6 Tbsp. olive oil
3 cups brown rice, cooked
For the stir fry sauce:
1/3 cup soy sauce
¼ cup water
2 Tbsp. agave syrup
2 Tsp. chili sauce
3 Tsp. corn starch
Preparation method
1 Cut the tofu in half and let drain on a paper towel. You can squeeze the tofu gently to remove any excess water. Once drained, cut the tofu into small cubes and add to a frying pan with the olive oil over medium heat. Mix the tofu with oil and turn frequently to avoid burning. If the tofu sticks to the pan, add more olive oil. Remove from the heat once golden brown.
2 In a wok, heat 4 tbsp. of olive oil over medium heat. Add the garlic and sauté for twenty seconds. Turn the heat up slightly and add all the vegetables. Sauté until they are cooked but still crisp while mixing frequently. Add more olive oil to the pan if the vegetables begin to stick. Once the vegetables are tender, turn the heat down to medium and add the tofu.
3 To prepare the stir fry sauce, combine all the ingredients in a medium bowl and whisk together. Add the tofu and vegetable mixture.
4 Mix the vegetables and tofu with the stir fry sauce until well coated. Let simmer on medium heat while stirring frequently. The sauce will begin to thicken and all can be removed from the heat once it has reached your desired consistency, at which point you can remove from the heat.
5 Serve with brown rice and top with basil or coriander.
